Butter Paneer Masala Recipe

I got this recipe from following site: Shailu' Food



This is the best Butter Paneer recipe I could find online, I havent taken author's permission to print this recipe here...But I hope he won't mind...Also you should definately visit his site for more yummy recipies...

Ingredients:

250 gms paneer - cubed and sauté in a tbsp of ghee till golden brown, remove into a dish and add a cup of hot water to the fried paneer cubes and let them sit in it for 5mts,then drain the water and keep aside
2 big onions (blanch for 10 mts and puree)
1 tbsp ginger-garlic paste
1 tsp red chilli pwd (I used kashmiri chillis)
3 big ripe tomatoes (blanch ,de-skin and puree)
3 tbsps cashewnut paste
½ tsp coriander pwd
pinch of haldi (turmeric pwd)
1/2 tsp kasuri methi (dry fenugreek leaves)
garam masala pwd (make a pwd of 3 cloves,1 green cardamom and 1” cinnamon)
salt to taste
3 tbsps butter
2 tbsps fresh cream

Heat 2 tbsp of butter in a pan, add the onion paste and sauté till brown. Add ginger-garlic paste. Saute for 3 minutes. Add chilli pwd and combine,followed by the cashew paste and combine.
Add tomato puree, crushed kasuri methi,coriander pwd,haldi,garam masala and salt. Stir and let it simmer for 4-5 mts.
Add the paneer and simmer for 4-5 minutes. Add a small cup of water and let it cook on medium heat for 10 mts or till you get the desired curry consistency .Remove from fire, stir in remaining butter and fresh cream.
Let the curry sit for 10-15 mts before serving.Garnish with coriander leaves.

Vegetable Chop

This is a famous snack served in West Bengal,India.

Ingredients:

Potato - 1 medium

Carrot - 1 large

Beetroot - 1 small

Cauliflower - 1/2 of 1 small

Peas - 1/2 cup

Ginger - 1 tbsp, juliennes

Groundnuts - 2 tbsp, halved (optional)

Sugar - 1/2 tsp

Salt - To taste

Besan - 2 tbsp

Bread Crumbs - 1/2 cup

Cooking Oil - 1 cup (for deep frying)

Cumin Powder - 1 tsp (Try to change quantity and find out yourself the right quantity that tickles your taste bud)

Chilli Powder - 1 Tsp (or to ur tastebuds)

BreadCrumb

Tip:

Mix Cumin Powder and Chilli powder and Roast this mixture on low head, Be careful not to Char it...it should turn into light brown and should give you a nice aroma.

Coating:

1 Egg Beaten or

For Strict Vegetarian or People like me allergic to Egg
Besan mix by adding less than 1/4 cup water. This should not be thick

Recipe:

Cut each vegetable into 2-3 big chunks. Pressure cook on high heat for 2 steams. Drain water. Mash vegetables coarsely.

Heat 2 tbsp oil in Utensil. Add ginger, groundnuts, the roughly mashed vegetables, salt, and sugar. Cook for 8-10 minutes on medium high heat.

Add masala and mix. Remove the vegetables from heat and let cool.

Make chop-size dumplings using your hands, dip in the Coating mentioned earlier, coat with bread crumbs and keep aside.

Fry till dumplings/pakoras are golden brown. Remove from heat and keep on paper towel to drain excess oil before serving.

VEGETABLE CHOWMEIN RECIPE

Ingredients:
  • 1 Packet Noodles
  • 1 Onion Sliced
  • 1 Capsicum Sliced
  • 1 Cabbage Shredded
  • 1 Carrot Sliced
  • 1/2 cup Beans Chopped
  • 2 tbsp Soya Sauce
  • 1 tbsp Vinegar
  • 1 tbsp Chili Sauce
  • Salt to taste
  • 1/4 tsp Pepper Powder
  • 2 tbsp Oil
Preparation of Vegetable Chowmein :
  • Boil Noodles in enough water.
  • Take care do not overcook.
  • Strain Noodles through cold water 2-3 times and drain water and set aside, add few drops of oil to the noodles to avoid sticking.
  • Heat oil in a wok and add sliced onions and stir fry for 20-30 seconds, add all other vegetables and stir fry for 2 minutes.
  • Add salt and pepper and mix well. Now add boiled noodles and mix well (take care that noodles don't break) .
  • Add vinegar, chili sauce and soya sauce and stir fry for a minute. Serve the vegetable chowmein hot.

Chicken Manchurian

Ingredients: Chicken thighs 4 no.(skinned and cut into cubes of size 1/2" each.) 8 pods Garlic chopped fine. 1 small Onion chopped fine 1 tsp Soya sauce or as required 1 tsp Tomato ketchup or as required 1/4 tsp Chilli Pwd (optional) 8 no. Green Chillies chopped fine 4 tsp Refined Oil 1/4 cup all purpose flour/Maida 2 tbsp Cornflour Salt to taste Method: Rub salt and marinate chicken for an hour. Make a batter of maida and cornflour and soak the chicken pieces into it. Deep fry the chicken pieces and keep aside. Heat oil in a pan and add garlic, onion and green chillies and fry till crispy and brown. Now add chilli pwd, salt to taste, add deep fried chicken pieces, tomato ketchup and soya sauce. Fry at high flame (may be for 7-8 mins) till the chicken becomes soft and absorbs ketchup and sauce. Add water while stirring if necessary.
